The French eat high quality food. They stay away from processed foods, and eat lots of different types of food. They don't eat the same old meals over and over again. The French eat in season. So the food they eat is at its freshest. Each dish is savored separately. The French eat a little bit of everything. Even if they don't particularly like a vegetable - they still try a few bites. I'm guessing all these different types of foods give their bodies energy and stop them craving snacks all the time like I do.
